Will you look at this cider doughnut?

Doesn’t it bring to mind the county fair, with its cotton candy, corn dogs, candy apples, and fried dough?

Or maybe it reminds you of the doughnuts your mom or grandma or an older neighbor used to make. Doughnuts that were deep-fried, then tossed in a bag of sugar, or dipped in a syrupy glaze.

What IS it about warm streusel atop a muffin or coffeecake?

Is it the butter… the aroma of cinnamon… the slight crunch and deep flavor of just slightly caramelized sugar?

All three, I’d say.

The best part about many a coffeecake is when a few squares have been cut and served, and you press your finger over the streusel scattered in the bottom of the pan, and furtively bring it to your mouth…

Maple Corn Muffins: Southern classic gets a Far North makeover

Is there anything quite as lovely as a simple corn muffin?

Its sunny interior perfectly reflects the color of the corn from which it springs.

You know the liquid-yellow hue of a just-shucked ear of corn? It’s not Crayola yellow, nor golden, nor even bright lemon.

No, fresh corn is a pale but rich yellow, the color you might expect an opal to be – if opals came in yellow.

The muffin pictured above isn’t exactly corn-colored; it’s a deeper tone, a combination shucked corn and mahogany. But its slightly less sunny color is the result of a secret ingredient…

With nearly 1.2 million searches every month for the recipe, this particular bread is obviously a favorite of foodies everywhere. Or maybe it’s simply the Holy Grail of bread recipes: much sought after, never found.
