Gluten-Free Lemon Pancakes: rise and shine!

Aren’t these the most lemony looking pancakes you’ve ever seen?

Bright as a summer sun, their color comes from eggs, and whole-grain cornmeal, and grated lemon peel. A totally golden triple play if ever there was one.

One thing these pancakes DON’T have: wheat flour.

Clearly, this isn’t it.

And amazingly enough, there are people in this world who don’t live and die by chocolate.

The pages of whose cookbooks don’t automatically fall open to recipes for brownies and devil’s food cake and chocolate chip cookies.

You know who you are, vanilla fans. And lemon lovers.

And coconut connoisseurs.

Sunny days, sunny flavors. Yellow daffodils, yellow chicks, bright lemon yellow filling.

I am a lover of all things lemon. I love lemon drops, lemonade, and lemon sherbet. Trying Limoncello, preserved lemon, and making homemade lemon peel are on my bucket list, and I used to eat the lemon wedges my parents would get with their dinners at restaurants.  So, what is it about lemons that I don’t like? … (more…)
