Fruitcake mix

Paper-lined wooden bakers measuring 7" x 4" are great for baking gift fruitcakes. One of The Baker's Catalogue's fruitcake mixes sets will yield three cakes in these bakers.

Instead of turning the cakes out of the pans, as the directions say, simply brush the cakes with the liquor or syrup of your choice. Let the liquid soak in, then wrap, tie with a bow, and give.

If you don't want to use liquor for soaking the fruit or for brushing on the cakes afterwards, simply soak the fruit in water or apple juice in step one of the recipe. If you do want to use liquor, we recommend brandy or rum.

Below is a recipe for vanilla syrup that is excellent for brushing on the cakes after baking.

Vanilla syrup

  • 1/4 cup water
  • 1/4 cup sugar
  • 2 teaspoons vanilla extract

Combine sugar and water in a small saucepan and cook over medium heat, stirring, until the sugar is completely dissolved. Remove from the heat, and add vanilla extract.
