Gingerbread Cookie & Cake Mix

Easy Gingerbread Cake
  1. Preheat oven to 350°F.
  2. Lightly grease and flour a 9"x9" pan.
  3. Beat gingerbread cake mix, 1 1/4 cups hot water, 1/2 cup vegetable oil, and 1 large egg for 2 minutes on medium speed, until batter is smooth.
  4. Stir in optional 1/2 to 1 cup mini diced ginger.

  5. Pour batter into the prepared pan.
  6. Bake for 35 to 40 minutes, until a cake tester inserted into the center comes out clean.
  7. Remove pan from oven and cool on a rack.
  8. Serve cake right from the pan.
