Strawberry Star Cake

Make a patriotic layered strawberry star cake from our vanilla bean pound cake mix.

Bake the cake
  1. Preheat oven to 350°F and prepare the mix according to box instructions.
  2. Pour the batter into a 12"x4"x2 1/2" tea loaf pan, and bake for 45 to 55 minutes.
  3. Cool the cake in the pan for 10 minutes, then turn it out on a rack to cool completely.
Filling
  1. Whip together 1 cup (8 ounces) heavy cream, 1 tablespoon sugar, 2 tablespoons (1/2 ounce) whipped cream stabilizer, and 1 teaspoon vanilla extract until stiff peaks form.
  2. Slice 1 pound of strawberries. Dice 1/4 of them into smaller pieces.
Assembling
  1. Cut the cake horizontally into three long, rectangular pieces.
  2. Using a star cutter, cut out as many stars as you'd like from the top third of the cake, making sure to leave enough of the cake whole so it doesn't fall apart; you're going to be using the cake layer itself, not the cutout stars.
  3. Spread half the whipped cream on the bottom third, and top with half the sliced strawberries. Add the second layer of cake, and spread with the remaining whipped cream and the remaining sliced strawberries.
  4. Add the third layer of cake—the one with star cutouts—and divide the diced strawberries among the star cutouts. Dust with glazing or confectioners' sugar just before serving.
