Ingredients

  • *You may use all white whole wheat or all all-purpose for a darker or lighter loaf, respectively. You'll need to use 1 to 2 tablespoons more water if using only white whole wheat; and 1 to 2 tablespoons less water if using all-purpose flour.

Directions

1) Combine all ingredients into a smooth, soft dough.

2) Place the dough in a lightly greased bowl, cover, and let rise until doubled in size, about 1 hour. Or, let the dough go through its first rising in your bread machine.

3) Turn the dough out onto a lightly greased work surface and deflate it gently.

4) Form the dough into a 9" log. Place the loaf in a 9" x 5" loaf pan, cover, and set aside to rise for 1 hour, or until it's crowned 1" over the rim of the pan. While the bread is rising, preheat the oven to 350°F.

5) Bake the bread for 35 to 40 minutes, tenting it with foil after about 25 minutes if it's browning too quickly. The bread is done when its internal temperature registers 190°F on an instant read thermometer.

6) Remove the bread from the oven, turn it out of the pan, and cool it completely on a rack.

Yield: one 9" sandwich loaf.

  • If there's a simpler, more reliably tasty loaf of bread to make, I haven't found it. Really nice flavor with minimal effort. I love making more-complicated, time-consuming breads, but sometimes, quick and easy can be just as rewarding.

  • Again.. six stars! This time I used the Artisan mix called for in the recipe. I also submitted one of the two cups of white whole wheat with one cup of KA 9 grain flour. Perfect! Awesome!

  • Can I give it 6 stars? This recipe is fantastic!!! Perfect. I used KA Bread Flour and for the whole wheat portion I used half KA white whole wheat and half KA 9 grain flour blend. I didn't have the Artisan mix so I used Bob's Red Mill 10 Grain hot cereal blend. I was afraid to put too much so I only used about 1/8 cup. (Should I have used the full amount in the recipe?) It was AWESOME! I have added the Artisan Blend to my King Arthur Wish List. LOVED it!

  • I would love to try this bread, unfortunately, step one (1) is missing. Maybe I'm confused? I will check back at a later date to see if the recipe has changed.
