Our King Arthur Downeast Blueberry Muffin Mix is an easy shortcut to hot, tender, moist coffeecake. The cinnamony streusel topping is a wonderful complement to the blueberry-studded cake.

Batter
Downeast Blueberry Muffin Mix

Streusel Topping
3/4 cup sugar
3/4 cup King Arthur Unbleached All-Purpose Flour
1 1/2 teaspoons cinnamon
1/4 cup (1/2 stick) butter, melted
1 tablespoon water

Prepare the mix as directed on the label. Pour the batter into a lightly greased 9-inch round cake pan. Mix the topping ingredients together until crumbly, and sprinkle over the batter.

Bake the coffeecake in a preheated 350°F oven for 38 to 42 minutes, until the topping is browned and the cake springs back when lightly touched with a finger. Cool slightly before serving.
Yield: 16 servings.
