1) While your biscuits are baking, heat a silver dollar pancake pan (or the pan of your choice) over medium-high heat.
2) Crack the eggs into the cups of the pan, and cook until set on the bottom. Turn and cook until done. Top each egg with some of the cheese.
3) When the biscuits are ready, remove them from the oven, and split each in half. Place some spinach, then bacon, then a fried egg with cheese on each biscuit bottom; add the tops, and serve immediately.
Yield: 7 breakfast biscuits.
