Ingredients

  • 7 freshly-baked biscuits (about 2 1/2" diameter), split in half
  • 7 slices Canadian bacon, cooked and kept warm in a low oven
  • 7 large eggs
  • 2 ounces thinly sliced sharp cheddar or 1/2 cup grated cheddar
  • 1 ounce baby spinach, optional

Directions

1) While your biscuits are baking, heat a silver dollar pancake pan (or the pan of your choice) over medium-high heat.

2) Crack the eggs into the cups of the pan, and cook until set on the bottom. Turn and cook until done. Top each egg with some of the cheese.

3) When the biscuits are ready, remove them from the oven, and split each in half. Place some spinach, then bacon, then a fried egg with cheese on each biscuit bottom; add the tops, and serve immediately.

Yield: 7 breakfast biscuits.

  • The biscuits were probably the easiest I have ever made and they turned out flaky and delicious. I followed the recipe that was printed in the July 2012 catalogue page 3 which is different from the one in the link! The biscuits needed 15 minutes to bake properly. Ingredients were weighed. The eggs were over easy and the it was country ham. Yumm. Will try buttermilk next time but this will be my biscuit go to recipe.
