Chocolate Snack Cake Filling

This fluffy filling is a dead ringer for chocolatey filling you'd find inside a filled cupcake. We use it in our Peanut Butter Whoopie Pies, but if you wanted to create your own chocolate-filled or frosted snack cake, this recipe will give you a topping that can stand up to the lunchbox commute without melting or running.
- 1/3 cup Dutch-process cocoa, sifted
- 1/2 cup semisweet chocolate chips
- 1/4 teaspoon salt
- 1/2 cup heavy cream
- 1 teaspoon vanilla extract
- 1/4 cup (1/2 stick) butter
- 1/2 cup vegetable shortening
- 4 cups sifted glazing sugar OR confectioners' sugar
- 1 tablespoon additonal heavy cream, if needed
