Easy Cinnamon Bread

This bread is a cross between a typical baking powder-leavened quick bread, and a yeast bread. The result: a cinnamon coffeecake-tasting loaf that's wonderful served plain, and is incredible toasted.

1) In a large bowl, mix together the flour, sugar, yeast, cinnamon, salt, and baking powder.

2) In a separate bowl, whisk together the milk, butter, and egg.

3) Combine the wet and dry ingredients, beating until smooth.

4) Stir in the cinnamon chips or Flav-R-Bites. Let the batter rest at room temperature for 1 hour, covered. Towards the end of the rest, preheat the oven to 350°F.

5) Spoon the batter into a greased 8 1/2" x 4 1/2" loaf pan. Sprinkle the top with cinnamon-sugar.

6) Bake the bread for 35 to 40 minutes, until it tests done; a cake tester inserted into the center will come out clean.

7) Remove the bread from the oven, let it rest in the pan for 5 minutes, then transfer it from the pan to a rack to cool completely.

Note: Don't slice the bread while it's hot! It'll slice much better when it's completely cool.

Yield: 1 loaf.

  • Just prepared this recipe again for the fourth time, but this time I opted to use three of my wonderful new little KA mini loaf pans so I can give them to our neighbors for Easter gifts. This recipe works perfect for three mini loaves. Life through KA just keeps getting tastier and more fun. Love the mini cinnamon chips. They are the big secret in this recipe for sure. If you have never used yeast recipes because the thought sends you into a panic - please don't let this recipe turn you away. This is so simple and easy, and so far hasn't failed in our house - and we do have our share of mishaps when baking now and then.

  • Sorry if this is a dumb questions but the recipe says 1/4 cup melted butter and I just want to make sure that the butter should already be melted before I measure out 1/4 a cup of it? Or do I measure 1/4 a cup of butter and then melt it? Thank you for clarifying! Can't wait to make this bread :)
    If the recipe says 1/4 cup butter, melted then you measure before melting. If it says 1/4 cup melted butter, then you melt first. Hope this helps. MJR @ KAF

  • In the blog posting of April 22, 2008, it leads me to believe that the cinnamon chips and baking powder are added after the one hour rest, but the recipe as seen here tells you to add everything together at the beginning. Which is the right way to do it? or does it matter?
    You are correct about that. This has been a topic of discussion in earlier blog comments from some of our customers. The bottom line is, PJ says it does not matter when you add the baking powder and the cinnamon chips. This being said,she prefers to make the batter, let it rest for an hour, stir in the chips and baking powder, then put it into the pan, sprinkle with cinnamon sugar, and bake. Elisabeth

  • Ooooohhhhhh, this bread is the BOMB!!! So easy to do and so yummy. I will admit, I ran out of the cinnamon chips, so I went to the local grocery store and bought a bag of Hershey's Cinnamon Chips----do not waste your money---- make sure you have the King Arthur Chips, they make the bread 100% better. Freezes well

  • Used homemade cinnamon chips by mixing 1/3 cup sugar, 1 1/2 tb , 1 tb syrup, 1 tb vegetable oil and baking 200 degrees for 35 mins. Stirred it in before the hour rest period and added a really good cinnamon taste. Homemade Cinnamon Chips? Oh my...we think the recipe means 1 1/2 tablespoons cinnamon and 1 tablespoon corn syrup? Other bakers may want to be sure before they attempt their own chips. Happy Baking! Irene @ KAF

  • This is just an outstanding bread! It's so much easier and less time consuming than cinnamon rolls and the taste is quite similar! I'm thinking it would be terrific with cream chess frosting (too over the top?) I definitely recommend the KAF cinnamon chips over the grocery store brands for any recipe calling for them. There is no comparison in taste. Also, the tea loaf pan cuts baking time and you don't end up with an undone center. The slices are a nicer size with this pan as well.

  • I FINALLY got around to trying this recipe! OMG - it is yummilicious!!! I used 2 cups KAF white whole wheat flour and 1 cup all-purpose flour. We love the crust on the outside and the wonderful texture on the inside! I can't wait to try some variations (chunks of apple, nuts, mini-chocolate chips, etc.), try it toasted, as french toast, etc. I know this will be a wonderful gift to share! THANKS KAF for another great recipe!

  • I found this recipe very good! I did not have any KA cinnamon chips so I used another brand. I did find, as did many others, that it takes longer to bake. I see many reviewers said it was very coarse, so I ended up using half cake flour and half KA all-purpose flour. That seemed to be the perfect combination to make a more tender texture. I've never gotten the pastry blend flour, so I am not sure of the mixture in that. I used a topping of equal parts flour, sugar and brown sugar and cut in some cold butter. It baked a nice crumb on top. Will definitely make again! May try with the KA cinnamon chips next time.

  • This was an easy recipe and does taste great but it took longer to bake than the recipe indicated. At 35 minutes it was still wet inside. It took about 45 minutes to get to 193º on an instant read thermometer. While the bread was baking I looked up on Baking911.com what temp it should be. That info was not listed on the recipe and using a toothpick was not ideal for this with all the gooey melted cinnamon chips. Other than the baking time, it all went well.
