Gluten-Free Chocolate Hazelnut Bars

Ingredients

Directions

1) Preheat your oven to 375°F. Lightly grease a 9" x 13" pan.

2) Beat the butter and praline paste until smooth. Add the extract and blend in the cookie mix; the dough will be crumbly. Remove 1 1/2 cups of crumbs and reserve for streusel topping.

3) Add the egg to the remaining mix and blend until smooth. Spread dough in an even layer on the bottom of your prepared pan.

4) Distribute dollops of Chocolate Schmear across the dough. Lightly mix the chopped hazelnuts with the reserved crumbs, and sprinkle evenly over the chocolate.

5) Bake the bars for 30 to 32 minutes, until they're golden brown. Remove from the oven, cool for 30 minutes, then cut into squares while still warm. Cool completely before serving.

Yield: 24 bars.

  • I made these cookies for a snack for family and friends. Everyone said they were OK, but they didn't have a WOW factor as most KAF recipes do. The consistency, structure, etc., were fine. I think they need a more flavorful filling since the cookie base is quite mild-to bland from the feedback I received. They keep well, are easy to eat, so I cannot say they weren't successful- no one said no to eating a second. But I do think if you used a real chocolate filling, or a raspberry chocolate filling, the resulting taste would elevate the ratings. I also may try toasting the hazelnuts to add depth to their flavor. I am going to try these again, and do a chocolate orange filling, or at least use something other than the chocolate schmear, as I do think therein lies the problem. I would recommend a try the recipe to others with that caveat.

  • I have enjoyed other recipes using the gluten free cookie mix (raspberry bar especially) but these were not up to par.
