Crispy, chewy, and cinnamon-scented, these classic cookies are fast and easy when made with our gluten-free baking mix.

Note: Please read and follow the recipe carefully; it calls for our gluten-free all-purpose baking mix, NOT our gluten-free multi-purpose flour.

  • 1 to 1 ½ teaspoons ground cinnamon
  • 1/4 cup sugar


1) Preheat the oven to 350°F. Line a couple of baking sheets with parchment, or simply take them out and set them somewhere handy; they don't need to be greased.

2) To make the dough: In a large bowl mix together the sugar and butter until blended.

3) Add the vanilla and eggs, and stir until blended.

4) Add the baking mix and stir until evenly blended.

5) To make the topping: Mix the sugar and cinnamon n a small bowl; use the larger amount of cinnamon for more pronounced cinnamon flavor.

6) Shape the dough into 1 1/4" balls (a tablespoon cookie scoop works well here). If the dough is sticky or hard to work with, refrigerate for 30 minutes or so.

7) Roll the balls of dough in the cinnamon-sugar mixture, then place on the baking sheets.

8) Bake the cookies for 14 to 16 minutes, or until set. They'll stay light-colored, only darkening very slightly on the bottom. Cool for 5 minutes on the pan before moving to a rack to cool completely.

Yield: about 30 cookies.

  • Easy prep, baked up perfectly. Chewy with just the right amount of crisp on the edges. Worked fine with both unrefrigerated and refrigerated dough (the latter cooked up slightly fatter in the middle but took about the same cook time). They sacrifice neither looks nor taste by being gluten free. Eating one right now. YUM.

  • I just attempted to make this and it was a complete waste. The dough never set up and I made the recipe to the exact measurement and instructions. This baking mix is really expensive and this caused me to waste almost half the box. I am beyond disappointed and so is my family who was looking forward to cookies tonight.

  • These were SUPER easy and absolutely delicious!! My family, who frowns sometimes at the gluten-free lifestyle we have switched to-thought they were also. I love oatmeal scotches but can't have oats so I put some of the butterscotch chips in this dough-awesome!! I love all the KA gluten free products and recipes and always use this website.   • These are absolutely wonderful!!! They are quick and easy to make! I used coconut oil for the butter and accidentally added the cinnamon to the batter and they taste great! They are cakey and yummy - I don't think anyone would know that they are Gluten Free. This recipe will be used often! KAF is the first place I look for GF recipes. Thank You KAF!!

  • These were easy to make and very tasty. I refrigerated the dough overnight and they baked up fairly thick without flattening too much. The texture was soft, and maybe a little cakier than my traditional snickerdoodles. They also seemed like they were missing something in the flavor compared to my normal recipe, so I might like to tweak a little more with extra cream of tartar or something. Overall this recipe turned out very well for my first foray into GF cookies.

  • I was looking for an easy cookie to bake today to take with me to Christmas Eve dinner that wouldn't take too much time. These are perfect! I used my own baking mix so they didn't come out quite as crunchy, chewy as I expected but they are more cakey with a thin crunchy crust. My GF daughter loves them!
