Lemon Sugar Syrup

Lemon is one of our favorite flavors; add it to any fruit dessert to pick up the flavor.

1/2 cup (3 3/4 ounces) sugar
2 1/2-3 1/2 tablespoons lemon juice (the juice of one large lemon)
1 tablespoon water
1 tablespoon zest (the zest of one lemon)

Zest the lemon and set aside the zest.

Juice a lemon. (Pierce the skin of the lemon with a knife, microwave on high for 30-45 seconds to make it easier to juice. Be careful—if the lemon boils the steam is hot when you cut it. In a small pan, stir together over medium heat the lemon juice, sugar and water until the sugar is dissolved. Stir in the lemon zest. Keep in a small covered jar if you don't use it all up. Brush over warm cake.

Lemon Sugar

Use any flavor citrus oil to create desired flavor—we keep several flavors on hand to use to rim cocktail glasses.

1/4 teaspoon lemon oil
1 cup (71/4 ounces) sugar

Stir together. Keep in a covered container to sprinkle over warm baked goods or to use to sweeten iced tea.

Add a teaspoon or so of fresh thyme or finely minced basil for a blend of sweet and savory flavors.
