Hands-on time:
Total time:
Yield: 6 cups dry mix
Published: 09/22/2011

Ingredients

  • 2 cups granulated sugar
  • 2 teaspoons vanilla
  • 2 1/2 cups semi-sweet chocolate
  • 3/4 cup milk chocolate
  • 1 cup Double Dutch Dark cocoa
  • pinch of salt , optional

Tips from our bakers

  • This mix makes a rich dark chocolate, well suited for adult tastes. For kids, try reversing the ratio, using more milk chocolate and less semi-sweet. Feel free to create your own custom blends.
  • Double Dutch Dark cocoa is a test kitchen favorite, but you can use any unsweetened baking cocoa, dutched or natural.
  • To make marshmallow spooky eyes, cut marshmallows in half with lightly oiled scissors. Press a chocolate chip or other small candy into the sticky side of the marshmallow. Here's lookin' at you, kid!

Directions

1) In the bowl of a food processor, combine the sugar and vanilla and pulse for 5 to 6 seconds until well combined.

2) Coarsely chop the semi-sweet and milk chocolates and add them to the bowl. Pulse in 10 second intervals until until finely ground and combined with the vanilla sugar.

3) Add the dry cocoa and salt, pulsing again until everything is well mixed. The mix will be slightly coarse, like brown sugar. Pour into a large glass or plastic jar for storing.

4) For each cup of hot chocolate, combine 1/4 cup of mix with 8 ounces of hot milk. Stir until all of the chocolate is melted. Top with whipped cream, marshmallows or your favorite topping. Makes 24 8-ounce servings.

Store airtight for 6 to 9 months. Excellent for holiday gift giving. Try packing in pretty mason jars tied with bright ribbons. Be sure to add a card with the mix directions.

  • The flavor of this was fantastic! We made it for a party and topped it with homemade marshmallows. This is definitely our new standard hot chocolate, and would make a beautiful gift.

  • This mix is decadent and creamy. The chocolate melts very easily due to it being ground so finely. The perfect comfort drink on a cold morning. The mix is very easy to prepare. I will never buy a hot chocolate mix again!!

  • Oh so good! We decided that it tasted like eating a creamy chocolate pie! It is rich and a little goes a long way but worth every drop.

  • We've made two batches of this. In the first batch we used mostly milk chocolate. In the second we used a mix of bittersweet and milk and we all thought it was better - even the kids! A great winter treat.

  • This was so simple & quick to do! The taste is outstandingly decadent. Now to play with it & try adding cinnamon or mint or a drop of Fiori de Sicilia or espresso powder or.....Oh the possibilities!

  • This was fantastic. I just made it for the kids and I did use 2 1/2 cups milk chocolate and 1 cup bittersweet chips. I used black cocoa powder. It is soooo good. I will cut the sugar by half next time. Other than that it was perfect.

  • I reduced the recipe so I would not overwork my blender to just 3 servings & it worked fine. I forgot to add the vanilla & did not have any milk, so I used powdered milk. I mixed that in my mug with the hot chocolate mix, added hot water & a touch of half and half. What a nice treat! Thanks KAF.

  • This recipe looks wonderful! Do you have weights for the chocolate amounts instead of cups? Sometimes I use chips and sometimes I use block, so weight seems to be a more accurate measurement for this sort of thing. Thanks! Nevermind, I didn't realize that there was an option at the top of the recipe for ounces! Great feature, KAF :)
Thanks for noticing the feature - glad it helped your baking or making adventure! Happy Baking! Irene @ KAF

  • I really should have cut this recipe in half since I knew my food processor wasn't large enough to fit everything. Instead, I tried it with the blender. My blender is notoriously lousy at blending and after clogging the blades with semi-melted chocolate I made the whole thing in batches in my food processor. I had made the biggest mess possible by the end of it, but found the hot chocolate well worth it! Wonderfully decadent and delicious! Thank you!
Kudos to you for staying with the process and reaping the chocolate rewards! Happy Baking! Irene @ KAF

  • This recipe is scrumptious! For those who like their hot chocolate a little less sharp, I changed quantities to 2 cups semi-sweet and 1 cup milk chocolate. With the holidays coming, I plan to add some cinnamon or espresso powder (depends on person) to the mix. Tie a ribbon around the top with a 1/4 cup scoop and recipe card ... perfect for those chocoholics in our lives. Of course, the fact I will make extra for us is a given! :) Great recipe KA!
Thanks for the gift giving tip. We're sure there are many who'd love to be on your list! Irene @ KAF
