Orange Chocolate Chip Muffins

Chocolate pairs with orange in these not-too-sweet muffins, which are equally enjoyable hot or at room temperature.

2 cups King Arthur Unbleached All-Purpose Flour
1/3 cup sugar
3 1/2 teaspoons baking powder
1 teaspoon salt
3/4 cup semisweet, milk or white chocolate chips
3/4 cup milk
1/2 cup vegetable oil
1 egg
1/2 to 1 teaspoon orange oil OR 1 to 2 tablespoons grated orange peel, to taste
1/2 cup coconut flakes, optional
additional sugar, for sprinkling on top

In a medium-sized mixing bowl, combine the flour, sugar, baking powder, salt and chocolate chips. In a small mixing bowl, whisk together the milk, vegetable oil, egg and orange oil or peel till light. Add the wet ingredients to the dry ingredients (along with the coconut, if you're using it) and stir gently for 20 seconds, or only until all of the ingredients are moistened. If you see lumps in the batter, that's OK; don't try to stir them out, or your muffins will be heavy instead of tender!

Lightly grease the cups of a 12-cup muffin pan, and fill each two-thirds full with batter. Sprinkle 1/2 teaspoon (or more) sugar over each for a crunchy, sugary crust.

Bake the muffins in a preheated 400°F oven for 18 to 20 minutes, or until a cake tester inserted into the center comes out clean. Remove the muffins from the oven, let them cool in the pan for about 5 minutes (or until they've set enough to be handled), and transfer them to a wire rack to cool completely. Yield: 12 muffins.

  • A Little Taste of Spring! Delicious, easy, with a delicate orange flavor. Used Orange Extract (and a splash of vanilla extract) with a tablespoon or so of fresh, grated orange peel. Didn't have coconut, so left it out. Baked up fragrant and moist with a delicate crumb. Just the right amount of chocolate too. Perfect.

  • Made them for the first time last night to bring to a brunch. They are out of this world.....and an absolute hit at the brunch! I followed the recipe except used orange extract for the orange oil, and used a combination of white chips and chocolate chips. Did not use coconut but mght next time. I can't wait to make another batch. They were an excellent muffin texture.

  • These were delicious! The kids and adults both loved these in my house. The mix was quite thick so I added a little extra milk (maybe a few tablespoons). However, the muffins turned out just fine...nothing like biscuits as other reviewers stated. I also added about a tablespoon of flaxseed meal as I always do to my baked goods. I used the zest of one orange and then added a little orange flavoring as well. I also used mini chocolate chips because that is all I had on hand. Definitely a keeper around here!

  • I followed this recipe exactly, even read others comments on how they come out more like biscuits, and that's exactly what they came out like...salty biscuits. I had to throw them all out! Now I am hesitant to try any other King Arthur recipes.

  • Really quick to whip up and very yummy. I used walnuts instead of chocolate chips and soy milk in place of regular milk. I would probably use a 1/2 cup of sugar next time if not using the chocolate chips.

  • I used 1 TSB. orange zest and semi-sweet choch chips which complimented the orange nicely. Very good! They did seem to be a little salty. I would just add 3/4 tsp. salt next time. Nice crunchy muffin.

  • This recipe was not only delicious but it was very easy to assemble and have hot muffins in no time at all!!! Only change I made to the recipe was to use Fiori Di Sicilia instead of the orange oil. Definately adding this one to my recipe file!!
