Ingredients

  • 3 cups diced, fresh pineapple
  • 1/2 cup sliced scallions
  • 1/2 cup diced red pepper
  • 1/4 cup small diced red onion
  • 1 tablespoon honey
  • juice of 1 lime
  • 1/4 cup chopped cilantro (optional)

1) Mix all of the ingredients in a large bowl.

2) Chill for an hour, to let the flavors blend.

3) Serve with grilled fish or meat; it's especially good with coconut shrimp.

Yield: 1 quart, 16 servings.
