1) Place the chocolate chips, salt, sugar, and espresso powder in a blender or food processor and pulse until finely ground.

2) Add the egg and pulse just until the mixture is smooth.

3) Heat the cream to just below a boil, with small bubbles forming around the edge of the saucepan (or microwave-safe bowl).

4) Turn on the blender or processor, and slowly add the cream. Scrape down the sides of the container if necessary. Add the flavoring of your choice and pulse to blend.

5) Divide into 6 individual serving cups. Cover with plastic wrap and refrigerate until firm, at least 2 hours.

6) Serve with whipped cream, if desired. Or simply garnish with a sprinkle of confectioners' sugar and fresh berries.

Yield: 6 servings.

  • I haven't made this yet, so am not rating it, though it looks fabulous. Does anyone have any idea if this can be made ahead and frozen without affecting the texture?

  • I plan to make this for the family Independence Day celebration, but I thought I'd give it a trial run this evening, without ever having read the reviews. I followed the recipe, except that I didn't notice that the egg should be room temperature. After chilling for two hours, the cups WERE set, but they seemed a little loose still. However, I'm extremely pleased. My daughters are begging to eat the test batch. When I put together the double-batch for tomorrow, I'll be sure to use room-temp eggs. The flavor is absolutely fabulous, and if I could give 10 stars, I would.

  • If you want an easy, yet amazing, silky, uber rich chocolate pie, this is the recipe for you. I find it more of a mocha pie -- the amount of espresso powder could probably be reduced by half, then I would have given it 5 stars. I didn't even need to freeze it -- it firmed up perfectly in the fridge. Other than that, it is crazy good! A little slice goes a long way.

  • The flavor of the recipe was excellent; however, my pots did not set up even after sitting overnight in the fridge. I will try again tonight and see if I'm the culprit rather than the recipe.

  • Before reading this review please understand I know chocolate. My name is Michael. I am a chocoholic. I followed the recipe and used Godiva liqueur instead of vanilla. The taste of chocolate was overwhelming. I won't make it again, but if I did I'd use vanilla instead of the liqueur.

  • Rated R is right! These quick little babies are sinfully rich, silky, chocolate pots of amazing! My pots were 4oz ball jars... perfect size, and the lids make for easy storing. Thanks for this decadent, yet easy recipe!
