Savory Pizza Bread

This loaf makes the best grilled cheese sandwiches ever!

1 cup King Arthur Unbleached All-Purpose Flour
1 cup King Arthur whole wheat flour, Traditional or White Whole Wheat
1 cup semolina flour
1/4 cup Baker's Special Dry Milk
2 teaspoons instant yeast
1 1/4 teaspoons salt
2 tablespoons Pizza Dough Flavor
1 tablespoon pizza seasoning
2 tablespoons cheese powder
2 tablespoons olive oil or garlic oil
1 1/4 cups lukewarm water

Combine all of the ingredients, and mix till cohesive. Allow the dough to rest for 30 minutes. Knead the dough—by hand, mixer, or bread machine—till it's smooth, shiny, and elastic. Allow the dough to rise for 1 to 2 hours, till it's puffy.

Lightly grease a 9" x 5" loaf pan.

Gently deflate the dough, and shape it into a 9" log. Place the log in the pan, cover lightly with plastic wrap or a proof cover, and set it aside to rise for 1 1/2 to 2 hours, or until it's crowned about 1" over the rim of the pan.Preheat the oven to 375°F. about 30 minutes ahead of time.

Bake the bread for 30 to 35 minutes, or until it's golden brown and the center of the loaf reads 190°F on an instant-read thermometer. Remove the bread from the oven, and after 5 minutes turn it out of the pan onto a rack to cool. Yield: 1 loaf.

  • Made this as the christening recipe for my new mixer. Substituted all purpose for the semolina, and since I've neither pizza seasoning or dough flavor added a bunch of fresh ground pepper, granulated garlic, oregano, dried onion, and a nice sized dash of Red Hot sauce. Turned out absolutely lovely, and tastes wonderfull with chedder cheese!

  • I am looking forward to baking this bread, but I have a question, where do I get Pizza Dough Flavour and pizza seasoning. Cheese powder can I use parmesan cheese? I am from Canada and can get a blend of Italian herbs but has salt added. What is the difference between Pizza dough flavouring and pizza seasoning?

    Carol - Yes, you may use parmesan cheese in place of the cheese powder. The pizza seasoning is made up of a combination of Italian seasonings and salt to be sprinkled on top of your pizza/foccacia. The pizza flavor is specifically for putting into your pizza dough. The pizza flavor has similar ingredients but has other additives which further enhance the flavors.   • I recommend this with reservations. I followed the direction to combine everything, only to find a thick slurry. I added a scant 1/2 c. KA all purpose flour, and and it was beautiful. In retrospect, I should have held back some of the water to see what was happening. However, it's a gorgeous bread. My mother loves it for sandwiches. She says its like focaccia in a pan bread.
