Vanilla Mug Cake

The kids (or you!) are clamoring for a sweet treat, but you don’t want to settle for store-bought cookies. The solution? This fun vanilla mug cake, ready in just minutes and made with whole wheat flour (don’t worry, they’ll never guess). Individual servings mean no battling over who gets the bigger piece!

Instructions

Prevent your screen from going dark as you follow along.
  1. Combine the dry ingredients in a 6- to 8-ounce mug, bowl, ramekin, or other microwave-safe container.

  2. Add the oil, water, vinegar, and vanilla, stirring until no dry spots remain and the batter is smooth. Scatter sprinkles on top, if desired.

  3. Place the container in your microwave and cook the batter for 40 seconds on high. Check the cake and if more than just a 1/2" circle in the center isn’t set, microwave for 5 to 10 seconds longer; in a 1000-watt microwave, the cake should be done in 40 to 50 seconds total.

  4. Remove the cake from the microwave and let it cool for a couple of minutes before enjoying. A dollop of whipped cream or ice cream is a nice addition.
