Zucchini Pancakes
For more traditional zucchini pancakes, the following recipe makes a great addition to a late summer or early fall meal, and they're great cold for someone heading out the door late for school the next morning. The following recipe will feed about six.
4 cups grated zucchini
1 cup freshly grated Parmesan, Cheddar, Monterey Jack or other cheese (or a combination)
4 eggs, beaten
1/4 to 1/2 cup olive or vegetable oil
2 teaspoons salt
1/2 teaspoon freshly grated pepper
1/4 cup (or more) chopped chives or onion
1 tablespoon freshly minced basil (or 1 teaspoon of dried)
1 tablespoon freshly minced oregano (or 1 teaspoon of dried)
l 1/2 to 2 cups King Arthur Unbleached All-Purpose Flour
Grate the zucchini and cheese.
In a mixing bowl, beat the eggs and oil until light. Beat in the salt and pepper. Blend in the chives or onion, herbs, zucchini and cheese. Add enough flour to hold the mixture together when dropped from a spoon.
Heat a spider or griddle until it is moderately hot, and grease it lightly. Drop the batter into the hot pan by the 1/4 cupful and brown the pancakes on both sides. Serve them as soon as they're done or keep them warm in the oven.

Delicious, quick, easy, and a great way to use zucchini. I used a generous 1/2 cup of onions, and next time plan to use a bit more cheese (pepperjack).

"Soooo gooood!" That is a quote from my 8 yo. Very easy to make. I doubled the recipe and used half yellow squash and half zucchini. They are like savory hash browns when cooked. Nice to have another skillet recipe for this summer heat! I will be cooking these again this summer!!

Amazingly yummy! I would not change a thing; my grade school aged kids all adore them. One question, why do you have to preheat a spider??

YUM! Being in the middle of zuke season, I was so happy to find this recipe. Fast, easy, and tasty, with unlimited choices for add-ins. I found this way easier than potato cakes (my achilles heel) and probably a bit more healthy. They were good hot and cold. next time might try dredging them in panko before frying for a crispier crust.

Wrote down receipe Friday Night, tried for Sunday Dinner, OMG, absolutely loved it. My husband and I decided to add zucchini to our garden this year and to our surprise have gotten 34 to date. Ran out of receipes to try, saw this and so glad we did. Thank you.
