As soon as you open the bag, put the whole thing into a glass jar and store in the fridge. It stays powdered and fresh that way. Add a few drops of lime oil to the food and you have lime heaven anytime you want.

I use this regularly to boost the lime flavor in a pound cake that I make. I have had none of the hardening issues. I do make sure the pouch that it comes in is zipped closed, and that is kept in a plastic zippered bag. Thus far it has been great and I live in Key West where it is certainly humid.

I bought this last fall and made the lime cookie recipe on the back of the package. My family and neighbors loved them. I sent some to my daughter in North Carolina and she loved them so much that she requested them again this year. I offered to make her lots of other cookies but she insisted that she wanted the lime cookies. She is expecting our third grandchild so I will be sending her lime cookies as many times as she wants. The powder that I had not used did harden in the package last year but my pantry is not vented and I think it may be because it was too warm in there. This has happened with some of my other baking supplies so I have moved them. It seems to have helped keep them fresh so far. I will let you know if it starts to harden again this time.

I purchased this with great expectation, but it totally hardened into a solid block inside the UNOPENED PACKAGE so I had to throw it away. What a bummer, and a total waste of money. Maybe KAF needs to improve the packaging on this item, as this seems to happen to others as well. I want to try the lemon too, but I'm afraid that will be a waste also.

I used this to make the lime cookies and was thrilled! But straightening my ingredient cupboard today, I found that the (still tightly sealed) bag is one solid mass of lime powder. Using 2 tsps wasn't a great value :( What could I have done differently? All my other products including potatoe flours, malt powder, egg whites, etc. are all fine... I know it says cool and dry, and that is what I did. At least I thought so...airtight jar? freeze or no?
