Great book! I love the recipes, the bread is wonderful, and it's great to be able to make fresh bread daily. However, measurements are by volume, not weight & I've found that, for best results, I don't usually follow the measurements exactly. I would recommend this for someone who has a little baking experience & is willing to tweak a bit if needed.

For years I tried to bake the bread I wanted with poor to average results. I have now used EVERY recipe in this book and had results that were sheer perfection! The method is straight forward and VERY simple, almost too simple ......I tried too hard at first, and it wasn't as good .... my mistake, not the books. I use the perforated bread pans sold by KAF and just lightly spray them with oil (PAM) and skip the pizza peel ....I'm just not good with it yet .... or the Giant spatula from KAF....works like a charm!!!. Obviously I recommend KAF for the flour of choice! The rye bread is the best I've ever made and I used the "rye improver" from KAF, it's crusty, and definitely not the "door stop" I used to make as rye bread. Enough, I'm gushing, but this is my best bread experience in my life!!!!!!

My husband loves bread, but has never been a very good cook, much less a baker. After buying this book, he's made bread regularly, and bread so good everyone who's had it hardly believed it wasn't bought from an expensive bakery! The basic concept behind the recipes in the book is quite simple, but it's invaluable as far as tips and techniques and just plain easy-to-follow instructions. Baking made straightforward, simple, and most of all fast. A wonderful book for anyone who thought making great bread takes slaving all day in a hot kitchen.
