Baker’s ammonia (ammonium carbonate) is a classic leavener, called for in your grandmother’s or great-grandmother's recipes.

  • Baker's Ammonia (ammonium carbonate) makes extra-crisp cookies or crackers.
  • Use in old-fashioned recipes calling for it (or for hartshorn).
  • Yes, it has a very strong smell when baking; don't worry, it totally dissipates by the time the cookies are done.
  • 2.7-ounce container.

Check out a great cookie recipe using baker’s ammonia: Vanilla Dreams.

This did work wonders in making and keeping my cookies crisp, and i used it successfully several times. The next time I went to use it, it had turned to liquid! I had followed your advice & kept it VERY tightly sealed. Do you think it would work as drops?
No I'm sorry, it wouldn't work as drops. It's time to get some more, and discard that one. Mary@ KAF

If placed in the freezer will this item last longer?
No. This is a very volatile leavener that must be stored tightly sealed. Temperature is not a factor. Frank @ KAF.

I used it one time. When I had everything on hand to try another recipe, I opened the lid and it was evaporated. * KEEP LID TIGHTLY CLOSED1
While this ingredient makes crispy cookies (and there is no other replacement for the magic it creates) one downfall is that it does evaporate over time. Irene @ KAF

This Baker's Ammonia makes the crispiest, best cookies that ever melted in your mouth. It has a strong ammonia smell when the cookies are baking, but it goes away as the cookies bake. Excellent cookie recipes using this ingredient are found in the King Arthur's Cookie book.

I bought this so I could make the 'Vanilla Dreams' recipe on this site. I'm fairly certain that this is the stuff that gives the Danish Butter Cookies (the ones that come in a tin) their texture. Cookies came out awesome, and I think this stuff is great.

Despite my skepticism, I purchased this for a sugar cookie recipe - it is SO worth it! The cookies were incredible - a shortbread flavor with crispiness I've never achieved from any baking powder cookie. Do not inhale this stuff - it smells very strong, but once mixed in and baking, the odor dissipates.

I bought this to use in a cookie recipe I printed off the King Arthur Flour website. I must admit that I had never heard of it and thought it was an odd thing to add to a recipe, but I found that it made the cookies delicious! A word of caution: After you open this, DO NOT SMELL IT! I have to smell every new ingredient I purchase, but smelling this one was a huge mistake because its extremely potent! It cleared out my sinuses and had tears running down my face for several minutes. It was quite funny, but now I always read the labels before smelling anything new! This is a great product!
