Baker's couche gives baguettes chewy, crunchy crust


Artisan bread bakers use a canvas cloth to create their fabulous, crusty baguettes; you can, too.

  • Untreated, unbleached 18" x 30".
  • Imported from France.
  • Made from 100% natural flax fibers.
  • Place shaped baguettes in the folds of the floured cloth; when risen, roll them onto a peel, then off the peel onto your hot baking stone.
  • Simply brush flour off couche when done. If dough sticks, allow it to dry, then scrape off. Please don't wash couche.

HI! Just needed to say....I am very offended by Gordy from AZ's review....where he insults the product and says it must be "because its made in France"..... I have used my friend's couche they bought from KAF and I am ordering one myself now! They work EXACTLY as they should, and are exactly as KAF describes! Like another reviewer said, this is a tool! It is not something to look pretty on the counter!

I bought a couche months ago and I mistakenly washed it and it ripped to shreds. I wish I had known not to wash it in the first place. So please send a note people who might not know that you don't wash the couche. Thanks E

Very disappointed with this item. Way too small, very limp and will not keep baguettes from moving. I am surprised KA sells this kind of product. I want a commercial quality couche, this is a toy. Maybe because it's made in France. oooooooooooooooooo. Most of the KA items are solid. I am looking for a local source so I can see it.

I've been a chef most of my life and the only problem I have with this bakers tool is that it is to small for the price. The standard size should be increased even if the price increases. 24x50 Is a size thats suitable for authentic french bread. i hope you all agree. Thanks

I don't know what some of the other reviewers were expecting, but while the texture is similar to a very fine burlap, this is NOT just a 'piece of burlap.' It's not perfectly finished (two edges are selvege, the other two are cut) but other than that it's perfect for the use and exactly what small artisan bakers have used forever. You aren't supposed to wash it, so it isn't going to fray significantly in normal use. But if the unfinished edge bothers you, run a line of zigzag along the unfinished edges. A hem would make the edge too stiff to fold well, and that would make it less useful for the job. It's a tool, not a decorative item.

This product should be improved. The fabric is right, but prospective buyers ought to be informed that the edges of the fabric are unfinished. The left and right sides of the fabric were (pooly) cut along the grain, and there were several threads which had already begun to run. The top and bottom still had the selvedge. This too is normally removed on a finished product because it is not very stable. It cost me to have all four edges surged on the two clothes I bought. Now the couches are a product worthy of being sold by King Arthur. Happy Proofing!

Don't listen to uninformed reviewers. I've used this couche for sourdough baking for 6 years with excellent results.
