Baker's couche gives baguettes chewy, crunchy crust
Artisan bread bakers use a canvas cloth to create their fabulous, crusty baguettes; you can, too.
- Untreated, unbleached 18" x 30".
- Imported from France.
- Made from 100% flax fibers.
- Place shaped baguettes in the folds of the floured cloth; when risen, roll them onto a peel, then off the peel onto your hot baking stone.
- Simply brush flour off couche when done. If dough sticks, allow it to dry, then scrape off. Please DO NOT wash your couche! Doing so washes away the yeasty, floury surface that gives your bread the unique crust for which baguettes are known.

I too wish I had read reviews before ordering. Unfinished frayed edges for $20. Go to SFBI instead. I'm not sure if their edges re raw, but their prices are way less.

I ordered 2 of these clothes about 10 years ago from KAF and they are great. I recently order 2 more and the material is not the same plus they just chopped the cloth off. No hem on the cut edges. Go back to your original supplier. These are really cheap material.

I can't believe I paid $20+ for a piece of fabric that looks like a 3 year old cut and packed it. I have strong reason and evidence to believe that you are not shipping what you are listing here. I came back to the website and read other reviews right after I received my shipment. Gush! why didn't I do that BEFORE I ordered it? Anyway, what's the point in keeping this item in your catalog although it proved itself "useless" and "highly priced"???

I never had anything I didn't like from KAF until this one. I may need more specific instruction on this. I like baguette pan much better. I just need more detailed and precise instructions on this. I do not want to send it back yet until I try my perseverance. I am sorry to hear this is not working out. Please give us a call and ask to speak with one of our bakers. the edges were frayed when it arrived. I agree with another person who said that flour on a cotton tea towel would work just as well. Too expensive for the product. I am sorry this did not work out for you. Please contact customer service and we would be happy to refund or exchange for another item.

Well, I am a huge fan of King Arthur, recipes and products alike... however, I was disappointed when the couche arrived. For something that ended up costing almost $30 (8 dollars for shipping!), the quality is pretty poor. The edges are all uneven and the couche doesn''t have the professional "feel" I expected for something sold as a high quality item. I will use it for my baguettes, but find it is overpriced

I used this couche for the first time yesterday. It's great. I downloaded and read the instructions - both of them, rubbed one side with flour, placed it flour side up over a few pieces of wood set to the desired width, placed the dough seam side up (top down) and covered it with a sheet of plastic. A few hours later we were enjoying some very good sourdough rye. The couche was slightly damp so I hung it to dry by the oven then rolled it up (to avoid creasing) and stored it for the next time. The size was right for our counters and baking stone so that is good in our case. My wife told me if using the cloth was a problem, using the oven was out of the question.

I have to agree with the other reviewers who gave this item low marks. I've had good luck using the couche to shape loaves, although it is NOT very stiff, and with anything bigger than a baguette (batards, ciabatta), I end up stacking up cookbooks or bags of flour to make sure the bread keeps its shape. After using it only a few times, the edges are terribly frayed. Luckily, my wife has a sewing machine and has agreed to hem the edges. But hen you pay $20 for a small piece of fabric, you expect it to be a finished product, and not a DIY project. My second comment is that after several uses, my breads emerge from spending 4 hours in the floured couche with many small fibers stuck to the bread. Even after baking, the bread comes out a little furry. I can't imagine any ill effects from consuming a few threads, but it hardly makes for a professional presentation, nor is it appetizing. I honestly think you're just as well off using a clean, floured tea towel.
