This is the best full fat cocoa I can find for baking. It's good for chocolate cakes especially in recipes where it is "bloomed" first with some boiling water, such as chocolate chiffon cake from Richard Sax's book, or cake recipes by Rose Levy Beranbaum. The reason I did not give it five stars is because it is not quite as good as the Van Leer brand than King Arthur used to carry. I still long for that cocoa--the flavor was really the best.

This is, of course, beautiful and delicious cocoa. However, I think I would buy the KAF Double-Dutch Dark Cocoa instead next time. Perhaps I'm just not used to Dutch-process cocoa but there is a certain smell and taste that I'm not crazy about. I didn't notice that when I used the D-D cocoa. Also, the D-D cocoa costs a bit less!

This is sinful! It makes the best brownies, chocolate cake, and I'm pretty sure it's going to work perfectly for my homemade fudge, as well. Since discovering this item, I'm no longer satisfied with the stuff from the grocery aisle.
