I thought it was me! Happy to know it was not. Tried it once in bread machine, did not rise. KAF replaced it. Tried it again in machine. Called hotline before I started. Good thing I did. Followed April's advice to add water, 1 tbsp at a time during first kneading to loosen it. Worked, rose but, I opened the lid too soon and collapesd the bread. It was still good. Not giving up - tastes like genuine French croissants. One more try should do it!

I had some difficulty getting the bread to rise and the end result was very dense. I called the helpline and talked to a baker and we believe it was a problem in how I used the yeast. King Arthur is sending me another mix and I will gladly try again.

Extremely easy to use in my bread machine, and did not seem to need any additional flour or liquids... However, it WAS a bit dry when done and sliced. Tasty, keeps a long time, and very quick to burn in the toaster. Be sure to keep an eye on it!

Hello...The Brioche bread mix was very tasty but it didn't rise as described. But we are at 1500 ft. so that may have had something to do with it too. I also had other mixes from King Arthur that didn't raise. But the company replaced those. I am going to try adding extra yeast and see what happens. Pat

This is very easy to use, and produces a beautiful loaf every time! It's not quite as good, in our opinion, as the Portuguese Sweet Bread (please bring that back!), but for a really nice bread that has a wonderful, buttery flavor, you can't go wrong with this one. We buy LOTS of it every time it goes on sale!

First time using this mix; was pleased with the outcome and it was easier than starting from scratch.

I had bought this mix a while ago and it was past the expiration date when I finally used it. I replaced the yeast with a fresh package and mixed it in my bread maker but baked it in the oven. I used two small brioche bread pans I had purchased from KA some time ago and both loaves came out perfect. They have a wonderful texture and the taste is amazing. Love all the mixes I have purchased and the service is impecable. Thank you. Bonnie

The only product from KAF that has disappointed me. I have used it twice. I have made Brioche in the past and it is a lot of work and takes a lot of time. Reading the instructions on the package I was surprised to see that they were similar to any other bread mix, apart from the use of cool water rather than warm. Unfortunately, after every effort, it didn't rise. I ended up baking it as a free-form round loaf and the taste was okay but not something I'd serve to guests. The second time, I added additional yeast and followed traditional brioche methods, which includes very long rising times. This time, I was able to get the first rise out of it but that's it. Again, I ended up with a 1.5" loaf. Ultimately, regardless of the rise and texture, the flavor was quite bland and missing that buttery-sweetness of a traditional brioche so I'm not sure that I'd have liked it much even if the texture had been on-target. Mind you, it's not like it was BAD and tasted like garbage or something and I definitely found uses for it (I do not throw away food unless it's become poisonous).
This mix should have risen as expected. We'd be glad to chat baking with you and replace this mix so you can try again - please call us at 800-827-6836 and we will make this right for you. Happy Baking! Irene @ KAF

I have long been a fan of King Arthur products, and was pleased to receive this mix, among others, as a Christmas gift. I was very disappointed to find that, after following package directions, my loaf did not rise at all. I contacted customer service via email and expressed my dissatisfaction. I received a response the next morning offering a free replacement. The loaf turned out sweet, dense, and a bit crumbly, but overall, delicious. I am pleased with the product, and even more pleased with the customer service I received.

I am not sure if I received a bad batch of yeast with my box. The dough didn't rise well and the texture was not like the Brioche I have made in the past with my own recipe. The texture was more like a cake. I am sorry this did not work out well for you. We would be happy to replace or exchange the mix. Please give customer service a call at 800.827.6836 and we would be happy to discuss this with you.
