I used this in the streusel topping of the lemon blueberry streusel cake-at first I didn't like it because the lemon peel was very hard in the streusel-kind of a tooth breaking quality! But by the next day-it wasn't hard at all-just really delicious!

Being unsulphured these peels far surpass the barely edible grocery store variety for flavor and taste.
