Used this to make pumpernickel and marble rye with great results. I live in Puerto Rico and when I grabbed the jar yesterday, it had turned into a rock. Just wanted to know if this can be refrigerated/frozen or what the best storage option for high humidity is. Thanks.

I'm sorry this item is out of stock, because it's really useful. Formerly, I used to make dark rye (my favorite sandwich bread) with Dutch-process cocoa and espresso powders, and they changed the flavor of the dough. They weren't disagreeable, in certain contexts we liked them, but sometimes we didn't want that taste, or as much of it. This product is perfect for giving color to American-style dark rye and pumpernickel breads without the dominating taste of chocolate. Please bring it back before I run out!

After purchasing this item, I have concerns that CSPI has urged FDA to prohibit this because it's potentially carcinogenic. Any one have anything to add? Concerned before I use it! Ingredients are not listed on the label. Caramel color is made from sugar and corn syrup. The manufacturer has issued information in a press release addressing the concerns you mention. I always use it in my rye breads, and for additional color in other breads and muffins as well.

So far, Ive used it in pumpernickel bread and gravy. We like the color, although I'll probably use a little less in my next loaf. I'll be looking for other ways to use it.

I've been making bread for a while, and only recently bought this. My husband loves hearty breads, and when I made pumpernickel for him, he asked why it wasn't dark. So, I purchased this and made him a loaf, and what a difference in the appearance. It looked smelled, and tasted like a loaf you would buy at a bakery.
