i USED THIS STARTER A LONG TIME AGO. IT HAS BEEN IN THE BACK OF MY REFRIG FOR A YEAR. i JUST OPENED THE CROCK AND IT HAS A DARK FILM ON AND WHITE UNDERNEATH IT BUT IT IS NOT HARD AT ALL CAN I BRING THIS BACK TO LIFE?

I have used this starter for some time now. I recently found my grandmother's recipe for rye sourdough and used this starter as the base. All I can say is "incredible" my father who is visiting had tears in his eyes when he had a warm end piece with fresh butter on it. Said it brought back all this wonderful memories of his mom making bread. He is 77 years old and if it can bring back that kind of memory, Is there anything else to say. It brought great joy to my father and I must say its the best rye bread my family has ever eaten. I did use the rye enhancer in the bread and believe that it added to an overall perfect loaf of round rye.

a friend gave me 1/2 of her original batch. the breads (from recipes on this site) turned out quite good (although as others have said, not terribly sour. regardless, the texture was fantastic). i kept it in the refrigerator and fed it/used it a bit infrequently. i covered its bowl with a shower cap and rubber band, but when i read the instruction (months after the fact!) to only partially cover the bowl, which i did, it completely dried out and died. if you don't use a special crock (or should you?) what is the best way to store this in the refrigerator?

Sourdough needs to be loosely covered to keep it from drying out and able to breath. A crock works well, but isn't necessary. It sounds like your dough was able to breathe with the shower cap on it. Longer cooler ferments of the dough help to increase the sour taste. of the baked goods. Mary@ KAF

LOVE it! I ordered it 3 months ago and make a loaf of bread every weekend. Delicious, easy to maintain AND there are 35+ recipes on the KA website using sourdough. The Multi-Grain Sourdough Boule and The Extra Tangy Sourdough Bread are our favorites.

Excellent starter! It was bubbly and active very soon after its first feeding, and made delicious banana bread from the second "discard" and the extra tangy sourdough recipe after just the third feeding. The directions that come with the starter are easy to follow, as are the recipes. I would also recommend the Baker's Banter blog for more details and pictures of the bread recipes. Thank you!

The starter works great! I tried to make sourdogh bread about 10 years ago but gave up because of poor results and the hassle of maintaining the starter. The KAF starter is easy to maintain and developed a sour taste right away. I tried the extra tangy recipe got flat loaves. I consulted a bread book and found you have to turn the dough every hour to keep the yeast going and add structure to the bread. It made a huge difference.

I would like to buy this for my cousin in Austria -- will it keep if I have it in my suitcase? Will it survive the trip?
Yes, it will survive the trip as long as you are flying! Feed it once you arrive. Store in the frig if you are not going to want to maintain it everyday. Elisabeth @ KAF

This has been such a success for me, now all my friends want some of my starter. I grew more starter following the instructions on the sheet, but I don't know how much to give to all my friends, versus how much I need to keep for myself to keep baking. Any tips?
This is nice to share with friends-Every time you need to feed your starter you will be discarding some starter and this is what you can give your friends. They will then feed it 1 cup of flour and 1/2 cup of water. JMD @KAF

I received the starter two days ago and baked my very first sourdough bread last night! I used your sourdough pumpernickel recipe, omitted the onion, added two tablespoons of caraway seeds, replaced half the all-purpose flour with white whole wheat, added 1/4 cup of potato flour and 1 tablespoon gluten. Not sure if it is the altitude or something else, everything took only half the time indicated in the recipe. Instead of having the feed the starter and wait overnight, it only took a few hours for it to triple in size and get all bubbly. Same with proofing the dough - two hours and it was already doubled in size, and it was not even that warm a day. A tip on water: I know someone said use bottled water, but I just boiled tap water, let it cool to lukewarm and it worked just fine. GREAT starter!
