I love this stuff. The only issue I have is that it doesn't come in a large quantity. To use it as a substitue for coconut milk would require half the package to be used, but to add a tablespoon or 2 to your cakes/muffins gives your desserts that "what is that?" hint of uniqueness. Therefore it's more practical to use as a combo with coconut flour, rather than as a substitue for coconut milk

My family has enjoyed this in frostings, pudding (w/ chocolate was the best) in breads and coffee cakes and I use it all the time cooking Indian food and curries. I take it straight from the freezer and sift or toss it in the blender with some water. It is MUCH better than having half a can of coconut milk floating around the fridge, and I can make the flavor as concentrated as I like!

I have only used this in a very quick "recipe" but I will give it high ratings, even if that is all I use it for! There is a gourmet popcorn shop in our top which sells for premium prices various flavors of popcorn. One of them is "Coconut Curry." Although I was dubious of such a flavor combo on popcorn, a friend of mine recommended it. Last night, I put a dusting of coconut powder on my popcorn, with a light sprinkle of curry and it was just plain delicious! Cant wait to try it in other recipes! Elaborate baking is fun, but this is a quick treat that you can enjoy anytime!!!

This makes the yummiest buttercream frosting. I beat it into the butter and then added a little cream, vanilla and a couple of cups of powdered sugar. I also mixed 1/4 cup into a yellow cake I was making. Wonderful!

I use this to make coconut cake and am already on my second order. For me this is better than buying coconut milk in the stores because there are instructions on the back of the package if you need to dilute it into an actual liquid. If it gets a little clumpy in storage, I just use a rolling pin to roll out the lumps before I use it. I love this stuff.
