If you love coconut, your ship has come in. I've used this to make coconut-flavored whipped cream (mix 1/4 cup powder with 1/4 cup heavy cream until smooth, then add to your whipping cream and go to it; add a drop or two of coconut flavoring if you like). It acts like a stabilizer, and the whipped cream doesn't weep at all. Pipes beautifully. The powder is an excellent ingredient in coconut cakes or cookies; for each 1/4 cup powder you use, cut back on the fat in the recipe by 1 tablespoon. You can also mix this powder with confectioners' sugar when you sift it for coconut frosting. It's amazing stuff. My next thing to try is 1/3 coconut milk powder and 2/3 tapioca flour for tempura coconut shrimp batter.
