I'[ve tasted many fruitcakes over more than 50 years and never found one that I really liked. That is until I made King Arthur's fruitcake using their bag of fruit blend mix. It turned out light, moist, and delicious!!! I'm ordering more tonight to make sure we won't run out.

WOW! Fabulous flavor and easy to make. I used the mixed fruit blend from KAF but added my own dried cherries and some dried papaya. I would suggest lining the pans with parchment, as the cakes did stick somewhat. I'm also at High Altitude (7200 feet) and did not need to make any adjustments other that to (carefully) increase baking time.
