I'm converting my favorite recipes to sugar-free due to being diagnosed with Type II diabetes. This product is so useful, both in savory and sweet recipes. It's a mainstay to mix up my own "mixes." I give away as gifts too, to friends and relatives watching their sugar. Cannot cook or bake without this now. (And, the Instant Clearjel too.)

Over the past year I've tried three different tapioca starches for my favorite Brazilian cheese buns (Pão de Queijo) recipe, and this is the only one that made nice, puffy buns. Don't know what the difference is, but it works for me!
