- Natural dietary fiber is derived from corn.
- One serving of Hi-maize (about 1 1/2 tablespoons) contains 6g of non-soluble dietary fiber: about 20% to 25% of your suggested daily requirement.
- Substitute for up to ¼ to 1/3 the flour in your baked goods; adjust up or down to taste.
- Add to soups, sauces, and smoothies.

How it works: Most starches are digested and absorbed into the body through the small intestine, but some resist digestion and pass through to the large intestine where they act like dietary fiber and improve digestive health. This type of starch is called "resistant starch". Also not a review, but a question.
May Hi-maize be classified as a gluten-free product?
I have just finished reading Prevention Magazines online essay about resistant starch and the great benefits for us all. The article specifically mentioned King Arthur Flour's Hi-maize. So I am really looking forward to working with it.

I just have a question. I notice the trademark sign in the name of this product, and you say that it is a different kind of corn. Is this a genetically modified corn?

I ordered my first bag of Hi Maize a little while ago and am finding I'm using it all the time now--and why not--that extra boost of fiber is a great addition to any baked item--and no one knows any different! So I just received my latest order yesterday--of which I ordered multiple bags since I'm using it all the time! Great product, and I'm storing it in the canister that just came as well! You all are just the best--keep up the GREAT work! Love ya!

Hi maize is considered a prebiotic that promotes good bacteria in your intestines as well as a resistant starch. It is NOT just plain old cornstarch! KAF has a PERFECT track record AND a HUGE & LOYAL following that spans the ENTIRE GLOBE! ALL the products they sell are high quality. I do not even work for KAF but when you read about 1,000 positive reviews on a site and see how these people are always there to help, it kind of tells you something about that company doesn't it?!

I bake bread alot and was excited about getting some extra fiber to add. When this arrived and I picked it up, I thought gee this looks like cornstarch. I looked at the back and the ingredient? CORNSTARCH. So I paid about 3 times as much for 12.oz of cornstarch as it would have cost me at the local grocery store. KAF, way to rip off your customers. This is not the way to gain customer loyalty! No where in the product description does it say it is just cornstarch. Won't be buying this again, and will re-think future purchases from KAF. Most of the products can be found in stores. Not worth the expense of the shipping.
Thank you for your review and concerns. The Hi-Maize Natural Fiber is milled from a different strain of corn. Our bodies treat this resistant corn as a fiber. They certainly look the same, but are digested differently. Irene at KAF

I've used resistant starch in my baking for many years now. (Only way to buy it then was in 50 pound bags!) It's an amazing product, especially for people who have colon cancer in their family. One thing though, although it is a starch, it doesn't work as regular corn starch to thicken things.

YOur no knead pizza dough re3cipe calls for Hi Maize but you are out of stock at this time. What can be used to replace it in the recipe. Just add equal amount of brad flour? Thanks

Comes in a convenient resealable plastic bag. I add this to my blueberry smoothies and it helps control my appetitie. I also melt chocolate chips and add Hi-Maize for the fiber.
