Bake hearth bread, without the hearth...

  • Natural, porous clay shaped into a covered baking dish.
  • Reproduces the effect you get from a brick oven.
  • Perfectly cradles a 3-cup-of-flour loaf as it rises.
  • Simply put the pan in the oven & cover it with the lid.
  • Steam generates from baking bread; emulates a steam-injected oven.
  • Makes a crispy, crackly crust; a moist & chewy interior.
  • Measures 14 1/2 x 5 1/8 x 7 high, with lid.

I LOVE this baker. I have been using it for about six months primarily baking Bitman's No Knead recipe (and variations on that theme) and have been very impressed with the results. I only oiled it once or twice in the beginning with olive oil and have not had any problems with bread sticking. It cooks evenly and produces a nice, thick and crisp crust with a great chewy interior. When I bring the bread to parties people think it was artisan bakery baked. I would definitely recommend it!

This made a great loaf until the end broke off for no apparent reason. It is not necessary to use any oil ever and for the year or so I used it, I preheated it to 500 degrees and then put room temperature dough in it. It is the only tool I've ever had that produced a professional French loaf with a great crust, but its breaking for no apparent reason has turned me off. I will use a cast iron pot in the future and make a round loaf.

Comment on Franks review, thank you so much for the up date on proper use of the clay baking pan. I guard and protect all my baking equipment. Thanks again.

Be careful! Do not put cold dough in it when it is very hot. It will shatter and crack. Oil it first before baking. Oil only the bottom and spray the top with an oil spray lightly. Dough must be room temperature and not from the frig. Heat long baker in oven on medium heat 350 degrees. Do not wash in dishwasher it will develop small cracks eventually. The soap will soak in the clay baker and you will taste the soap in the bread. Wash with hot water and no soap. Dry with paper towel, let dry. Do not use vegetable oil in it . It will get very sticky with vegetable oil. Use butter or olive oli only.

I ordered this and I LOVE it. It makes a great loaf of bread. I do my dough in the bread maker and cook it in this. I highly recommend this one.
