I use this flour in so many of my recipes now--sometimes using it for the entire flour needed in the recipe, or half and half (with other KAF flours). It "lightens" (texture-wise) so many of the things I bake... I've also managed to convince some of my baking/cooking friends to switch to this flour--it's wonderful!

Since my son started eating solids I started making the majority of his food from scratch using all organic ingredients. When I began trying to make an organic whole wheat loaf at home it consistently turned out bad....dense, solid, bland....nothing a kid would touch. Then I started using this flour, along with the whole grain improver KAF sells, and I have had success every single time. My whole grain breads comes out a light, moist, tasty loaf. We haven't bought a grocery store bread in 8 months! I definitely recommend this flour.

LOVE LOVE LOVE this flour! I use it for everything...pizza dough, bread, muffin, cobbler topping. The texture is tender, flavor is good (I can tell the difference between this and all-purpose flour), and I love the health benefits.

Let me just say that my Mom was one of those heath-foodie people who was always shoving yuchy food down my throat with the exclamation, not that it would taste good but, it's good for you! And my answer to that was always, "Ummm....thanks, but no thanks..." and spitting it out when her back was turned. That is, until KA's White Whole Wheat Flour. I love this stuff! I've made several types of muffins, several types of quick breads, and cookies with it so far. In all cases, the whole wheat taste was either completely hidden by the other ingredients or so mild that you wouldn't notice unless you were the baker. Unlike some other reviewers, I wouldn't use this flour to make cakes or cupcakes, since to me these should be light, moist, and fluffy...something that just frankly isn't possible with a whole wheat flour (unless KA can pull off another miracle like the one they pulled with this flour), but I am looking forward to trying it in pie crusts, waffles, and artisan breads. There is no doubt in my mind that I can use half white flour and half whole wheat, but this stuff is so good, and my other recipes have turned out so successfully at the 100% ratio, that I will be attempting all whole wheat in future recipes, just to see if the positive results continue. One question I have for the KA crowd: I noticed that you have red whole wheat berries available for sale on your website and wondered if you wouldn't also be making available the white whole wheat berries that you use for this flour? I ask because I would love to grind my own flour the same day as baking for use in my artisan breads to preserve the full nutritional value of the whole wheat, but can only picture using THIS type of whole wheat flour in a 100% ratio and still have the family WANT to eat it.

This is a GMO, can not be organic all the bla-bla of albino grains is a big flop the bread I just made taste nasty. I lost my trust in King Arthur. Please send me a return label.

The difference between regular whole wheat and white whole wheat is that the white whole wheat is made with the white wheat berry instead of the red wheat berry. It is not an albino berry, just a different type. You would use it the same place where you would use regular whole wheat flour, but it is not interchangeable with all-purpose flour.
