TEST KITCHEN TIP: We’ve got a lot of dedicated yeast bread bakers here at King Arthur, so we’re always thinking about ingredients that can improve our “yeast bread experience.” This flour is the result of research we did into the ingredients used in traditional European hearth-style breads. Ascorbic acid (vitamin C) is a given; European bakers universally add it to bread dough to enhance yeast growth, naturally. And the hint of white whole wheat adds its own yeast nutrients. Finally, the medium-level 11.7% protein, and the mixture of both spring and winter wheats, makes this flour a joy to work with; your dough will be mellow, not tight, and should yield great oven-spring.

I've baked bread for 38 years - used King Arthur Flour exclusively for 20 of them. I never thought any flour could make a better bread until I tried the Artisan Bread Flour with the Long Covered Baker. Wow! I named the bread after my hubby - "Curly Bob's Italian Bread." The consistency of the bread, the smell, the taste - are indescribable. It's so good that even though I work full time, I still bake twice a week because baking with King Arthur Flour and your instant yeast make it pure pleasure. This flour is awesome! I made the Tuscan Coffee Cake on the back of the package twice and received rave reviews. I've never used dates before when baking but they were quite yummy without being too sweet. This makes a great treat for bringing to friends & family for Easter Sunday dinner!

I tried this flour in my Babka. I bought four more bags due to the success! The dough is silk-like to handle and the rise was beautiful. The finished texture was moist inside with a thin, even outer crust. I would buy this flour in 5 or 10 pound bags!

Combine this flour with an equal amount of French flour mix. Bake it in the covered baker and it becomes our favorite bread. It is mostly what we eat when it comes to bread--nothing compares.
