I ordered this book when I decided to get serious about pie baking. Smart move! I refer to it constantly - not only for the recipes but also for the info on utensils, ingredients, and equivalents. The illustrations are outstanding with more detail (and better quality) than photographs. This is much more than a cookbook and will reside in pride of place in my kitchen right next to "The Joy of Cooking".

The Baker's Companion Cookbook was my 6th or 7th book on baking. I found it to be extremely simplistic; perhaps that is why the other reviewers like it! The recipes are very easy to understand. However, the recipes are given by VOLUME, rather than by weight, a huge flaw. Also, the book is heavily weighted toward dessert items rather than bread items. BTW, I use King Arthur flour products almost exclusively, so I'm not biased against K.A.; I just don't like this book.

Prior reviewers are right on the money - this book is like having an expert baker right alongside you to help out with obscure issues but also to make sure that everything turns out perfect. There's advice, conversions, also for those watching their food intake for whatever reason - calorie, serving size, carb/fat/other info. Excellent job guys!

This is the most amazing cookbook out there. I use the recipes in here on a weekly basis. Make sure to try the homemade bagels and deliciously easy Vermont Oat Bread.
