I love rye bread. I recently learned that Pumpernickel is basically Whole Rye like the difference between all purpose flour and whole wheat. I am trying to cook with as many whole grains as possible (I stock 13 in my pantry now) and love this. Check out the KA recipe for Rye Swirl Bread. It's my family's new fav.

I use this in Rye Breads and it makes a real difference...Also recommend using First Clear Flour and expresso powder from KAF to make a really nice Russian Pumpernickel (such as the one in "Secrets of a Jewish Baker")

I'm lucky enough to be able to buy KAF in my local stores. But this Pumpernickel is available online and I'm SO GLAD I ordered it! I use the Classic Pumpernickel recipe on this site and every time it comes out perfect and delicious. It freezes well, too, so there's always good bread for quick canapes. Side note: Today I came across a recipe for Boston Brown Bread that is very similar to the Classic Pumpernickel (except for the steaming part). It is in "Breakfast Dainties" by Thomas J. Murrey, published in 1885. It notes that a "preparation put up by the Boston Cereal Manufacturing Company is an article of food quite recently introduced, which saves much of the difficult details necessary to make this excellent New England loaf". I think it's worth all of the "difficult details" to make it myself with this flour!

I can't believe I waited this long to get pumpernickel flour! Everyone else has said it all. This makes the best bread of all the rye flours you offer (and I have them all). Thanks, KAF! I'll be perfecting my favorite and I'll report back.

This makes wonderful bread! I've used it in both sourdough and the Traditional Pumpernickel Loaf on KAF site, and both were delicious!

I've tried to make bakery style Pumpernickel bread in my bread machine for quite awhile before landing here at KAF. I could never make anything even close....but the first time I used KAF Pumpernickel Flour, I was absolutely hooked. No longer heavy & tasteless, I am not plainly ADDICTED...so good, and it looks beautiful!

fantastic product! it's the basis for my very favorite starter. took only three days to be up and roaring & ready to go. just two refreshments are sufficient to revive the starter after a long refrigerator storage period. even the bag closure strip is exceptional.
