We use white spelt flour for pastry because our friend can't tolerate wheat gluten. The spelt is low gluten like pastry flour and makes wonderful pie crust - just substitute 1:1 in your favorite recipe. We also make bread from the recipe on the package.

Try the spelt pancakes in the KA whole grain cookbook. So tender, and so good. My husband always wants me to make these.
