This blend is fantastic. I use the recipe on the bag but add a little olive oil, roll it through my "chitarra" and the pasta has perfect texture with a firmness to stand up to hearty sauces.

My husband and I love to make ravioli. That being said we highly recommend the pasta blend. Use the recipe right on the bag and the pasta can be rolled down to a "6" without difficulty. It cooks up firm, but tender, never starchy. An excellent product.

Just so you know: this blend also makes wonderful potato gnocchi! Combined in a ratio of one cup of Perfect Past Blend to each pound of riced potato (russets are best). I find a pound of taters and a cup of flour are enough to serve four.

Given that I love pasta, and I own a kitchen-Aid mixer with all the pasta attachments, I embarked on try to make my own fresh pasta. Each and every fresh pasta recipe I found online or in a book -- from Mario, Giada, etc -- the results were always abysmally the same. The key wasnt the eggs, water, kneading or even the rolling -- it was the flour. All purpose flour: gummy and bland. Durum or semolina flours: good taste, poor consistency and "tooth". More or less out of desperation, I tried this product, figuring it had all the key main flours cited in all fresh pasta recipes, so it had to work. it did. This is the ideal fresh pasta flour -- it is the standard, the new paradigm which renders all others worthless. The pasta is firm, flavorful and with the perfect tooth. Even fresh from the water with drizzled EVOO and fresh grated parm, such a simple dish is exquisitely divine. Do yourself a favor, buy and use this flour for all your fresh pasta ans you will never look back.

I have been recomending this blend all over the internet. It is the best pasta blend you can get. So easy to work with, so tasty. The recipe is spot on. Perfect with the KitchenAid pasta rollers

This pasta blend was terrific. Even better than expected. I made fettucine with a bolognese sauce. I used the recipe on the bag for the pasta.

In addition to pasta, this blend makes a great pizza crust!

I'm new to pasta making and tried a number of recipes and flours. My fettucine made according to Marcella Hazan's recipe with all purpose flour (KA) was excellent. But then I tried the KA Pasta Blend and liked it even more. I did not use the directions on the bag, but stuck with Marcella's proporations of 2 eggs to every cup of flour. The fettucine, which I made the day before, dried for a couple of hours on baking sheets, and then stored airtight in the fridge overnight was toothsome and delicious!

I had just about given up making home made pasta. All the recipes had called for all-purpose flour and they were horrible. I ordered the perfect pasta blend and made it according to the directions on the bag and the pasta came out beautiful! I made some angel-hair and cooked it right away and it was perfect! From the same batch I dried some fettucini style noodles and cooked them a few days later; again it was great. I then froze some regular spag. style. and have just eaten that and again I was very happy. I will not use anything but this for home made pasta from now on! Thank you!

I used this blend to make homemade pasta with my pasta machine for our family New Years Day dinner. The dough came out perfect in every batch, did not get sticky, and did not turn mushy when cooked! The whole family raved over it!
