For extra-chewy bread, pizza, and bagels, and the highest-rising whole-grain loaves
This is the highest-gluten flour (14.2% protein) available on the retail market today. It's a must-have for lusty, extra-chewy artisan breads, and breads made with lots of whole grains.
- This unbleached flour is carefully milled from the finest hard red spring wheat.
- Perfect for pizza, bagels, chewy artisan loaves... anytime you want extra "chew" in your bread, or extra rise in your whole-grain (rye, whole wheat, oat) loaves.
- 3-pound bag, bagel recipe included.
TEST KITCHEN TIP: High-protein flour absorbs more liquid than medium-protein flour. When baking with Lancelot, add about 1 tablespoon extra liquid for each cup of flour (or more, in order to produce dough the consistency the recipe calls for.) » View packaging [116KB PDF]

No doubt the best high gluten flour out there. It's a shame the King Arthur folks aren't listening and taking any immediate steps to make it more affordable for us home cooks. I would gladly buy more quantity if I could save $$$
:(
I have passed your comments onto our merchandising department. In the meantime, try looking in a store that sells in bulk, like a natural food co-op, to see if they carry (or will carry) the Sir Lancelot so you can buy it in any amount you'd like. You could also get together with some friends and get a 50 pound bag through a distributor. Click here for the link to distributors in your area. Molly @ KAF

I agree on the bag size issue. Is there a reason I can't add gluten to bread flour to make my own?
You certainly can add straight gluten to a flour to increase the gluten content. We can't share proportions though, as they are proprietary.

I am in complete agreement with everyone else. The 3lb bag is to small and to expensive. I know that are a lot of fabicators and designer's out there who could make a machine that will package a 10 lb or 5lb bag of this great flour.

FABULOUS bagels! I made them for kiddush today, the minyan loved them, all the New Yorkers, too.

I've used the high gluten flour and like it. For those users in Southern California, Henry's Market's based in Orange sells bulk high gluten flour. They do not name the miller though, but in a pinch it will work

Sir Lancelot is an excellent product. Like the others, I'm disappointed it's only available in 3lb or 50lb amounts, however, I understand why it's that way. So I just bought 2 3lb bags to help King Arthur be able to afford a new bagging machine.
Thanks Matt. You keep baking, we'll keep bagging. Frank @ KAF.

Why not offer the 25# bag here that you pack for institutional accounts? Then you will pick up more business lost because of high price for 3lb. bag. Most people have freezers. For that matter, spelt should be offered in 25# also.
Thanks to all for your feedback on the bag size. At this time the volumes do not meet the minimums required by the mills for a 5, 10 or 25 pound sack. A 3 pound bag is the maximum weight we are able to fill right now. Commercially this flour is only available in 50# sacks through distributors. Frank @ KAF.

Your Product's are great. I've been a customer for at least 10 years and have always enjoyed everthing I have purchased. However your 3-lb bag of Hi-Gluten flour for the price is a little high. By the rest of the reviews...I see that I'm not alone. I know KAF will solve this little problem especially for it's loyal customers. A 5, 10, or 20 lb. bag would be ideal. The only reason I didn't give this a five-star rating was due to your pricing. Thanks for taking care of this for us.

You use to carry the high gluten flour in a five pound bag. I just used the last of mine I had stored in the freezer. I just signed on to order some more. Only 3 pound bag...why bother and too expensive.

So if your machine can't package larger bags, which I respect, then can you set up a significant price discount buying multiple bags? Like buy 4 bags for $5 ea?
I'll pass your suggestion to the appropriate people. Mary@ KAF
