King Arthur’s unbleached, unbromated, high-gluten bread flour, milled from hard red spring wheat grown chiefly in the Dakotas, is perfect for yeasted baked goods-bread, rolls, pizza, and more.

  • 12.7% protein, a full point higher than other national brands.
  • The higher the protein level, the stronger the rise.
  • Use in recipes calling for bread flour, including bread machine recipes.
  • Super when you're making rye or other whole-grain breads that have trouble rising their highest.
  • 5-pound bag.
TEST KITCHEN TIP: High-protein flour absorbs more liquid than medium-protein flour. When baking with bread flour, add about 2 teaspoons extra liquid for each cup of flour (or more, in order to produce dough that’s the consistency the recipe calls for.)

The Oatmeal Bread recipe on the back of the bag is my family's favorite. Soft and moist with great flavor. Makes great toast & great PB&J. We go through so much bread flour... PLEASE--A BIGGER BAG!!!

Our All purpose flour is now available in 10 pound bagfs. Ask your store manager to carry it. Bread flour is only available in 5 pound bags. Mary @ KAF

On a number of occasions, I have made boiled bagels, sometimes using bread flour and sometimes using all-purpose (both King Arthur). They taste wonderful both ways, but this bread flour is far and away the winner in terms of texture. I knead everything by hand, and dough made with this has such a smooth, springy feel to it! I love it. I also agree with the other reviewers about how great it would be if this were offered in a larger size. It's wonderful in combination with whole grains, too.
