My goodness!! KAF has hit it again! I am such a lemon lover .. . as is my daughter. We LOVE these lemon bars. So quick and easy. I ran home after the office yesterday with just an hour before another meeting. By the time I headed out the door, my lemon bars were cooling in the fridge. What a great treat to come home to! Thank you, King Arthur!!

THESE LEMONS BARS ARE SO EASY TO PREPARE .I MADE THEM FOR WORK AND THEY WERE A BIG HIT . THE LEMON FLAVOR IS SO DELICIOUS THAT I WOULD SWEAR THAT FRESH SQUEEZED LEMON JUICE WAS IN THE MIX . I WOULD HIGHLY RECCOMEND THESE TO ALL OF YOU LEMON LOVERS OUT THERE ,YUM YUM .DENISE LUZZO

When I saw that KAF was selling a lemon bar mix, I was SO excited. I love lemon bars, but I don't always have fresh lemons on hand, plus I dislike the messy grating/juicing, so I ordered a mix, hoping that it would be as good as homemade. And, well, it wasn't, but it came pretty close; closer than any non-homemade lemon bars I've ever had. If I could, I'd give these 4.5 stars; I'm rounding up because I don't think it would be fair to give it only 4. Pretty much anytime you sub convenience items for fresh ones, quality will suffer somewhat, and these are no exception (though my taste buds are particularly sensitive, and that could be it). I could taste the difference; these lacked the subtle "oomph" of fresh lemon juice and zest. That being said, the mix really is about as well done as a mix could be. The balance between sweet and tart is excellent (I find many store-bought bars to be too far on the 'sweet' side), and they have a nice, thick layer of lemon; about twice as much lemon as crust. I only used 7T of butter (it recommends 8), and I didn't find the crust to be at all greasy and it stayed together just fine. I also lined my 8x8 pan with foil and greased the foil, which made clean-up a snap. Bottom line? If you like homemade lemon bars, you'll probably like this mix a lot, since you get really high-quality lemon bars with a minimum of fuss. Good job, KAF!
