A thick, rich vanilla. I had run out and bought a large bottle at Costco, but it was like water and added nothing to my baking. I bought this to replace it, and tossed the other bottle. This is the real deal and it makes a big difference.

I think there might be some confusion here about vanillin. As far as I know, vanillin hasn't been shown to be a carcinogen, although some of the agents used to produce it are suspicious in that respect. However, coumarin, which is an ingredienti n some cheaper Mexican vanillas, has been classified as a lung-specific carcinogen; it was banned as an additive by the FDA in 1954. So watch out for less expensive Mexican vanillas, which may still contain this ingredient (coumarin). As for this Mexican vanilla - I give it a thumbs up. Nielsen-Massey produces a number of really fine vanillas, including this one.

I was expecting a better product. The ingredients are not shown on-line yet they are, in order; Water, Ethyl Alcohol, Sugar, Vanilla Bean Extractives. Water and sugar are not found in good vanilla. Water is a filler and sugar is an unnecessary additive. I'm disappointed. It tastes okay, but for the same quality I would purchase vanilla from a local discount grocer.

It's my favorite vanilla. It's worth the extra cost -- I use it for all my holiday and party baking.
