Just made my first Pullman loaf in my new pan using the KA recipe, and it turned out great! No problems sliding the lid. I didn't use parchment paper, just spray, and had no problems with the bread sticking anywhere.

I can't wait to get my second 9" Pain de Mie pan! For those concerned about tight lids or sticking, use a piece of parchment paper over the top before sliding on your lid. This not only helps your lid slide on better, but relieves any fears you may have about your bread sticking to the top. Alternately, you can spray some non-stick spray lightly across the top lid and into the slide grooves, creating a food-safe lubricant. Love this pan size for just the two of us!

WhenI first tried this pan I found the lid very difficult to use until I realized I was trying to put it on backwards. Once I worked out that kink it has been a breeze to use. I have made several whole wheat loaves, using the KAF recipe, with great success. It is fabulous for sandwiches and toast. I LOVE this pan!

Save your money. i have been baking for years and I have the standard pain de mie pan. The lid get tighter when it is in oven. Well, the pain I just bought is so tight I doubt it will come off. I bought it because I wanted to give bread away a small pain de mie bread. This product is a disappointment.
