We love this, it makes the kitchen smell like a pizza shop. Here to order more. I also appreciate KAF's educated response to the MSG concern of some.

I'm not sure what all the fuss re. autolyzed yeast extract / MSG is about. Even if you avoid these products like the plague, you will still have MSG in your body because glutamate is one of your 20 genetically encoded amino acids and you have sodium in the fluid inside and outside of your cells. If you like the taste of mushrooms, soy sauce, or parmesan cheese, it is because of their naturally high MSG content. Autolyzed yeast extract is no more "artificial" or "processed" relative to the latter 2 ingredients. I vehemently disagree with Lee's views on Blaylock--he believes that fluoridated drinking water and the H1N1 vaccine are detrimental to public health! Sure, Pizza Dough Flavor is highly processed, but as long as you aren't subsisting off of it, it won't make you "unhealthy". I am a scientist who cares about public health and has no affiliation with KAF.

After reading the ingredients for this product I know I will not buy it. This is a very highly processed product, not "natural" at all. I have always held King Arthur in high regard and am disappointed to see such ingredients as autolyzed yeast extract and maltodextrin in their products. While the government tells us these items are Generally Recognized As Safe, I know many people who quit having health problems when they quit eating processed foods such as this and turned only to whole foods.

Autolyzed yeast extract is like msg on steroids - even worse! Please read Dr. Russell Blaylock's book "Excitotoxins: The Taste That Kills". You will understand how dangerous these chemicals are. Can't believe KA sells this junk amidst their other high quality offerings.
Thanks you for posting your views on this product. In checking with our manufacturer and our expert test kitchen staff, here is their response on the MSG issue.
Cheese contains rennet, a collection of enzymes which partially digest milk protein and release some glutamic acid. Furthermore, salty fermented foods (like cheese) are likely to have higher levels of monosodium glutamate than less salty, unfermented foods because: 1) Glutamic acid is released from proteins in the cheese as fermenting organisms digest them. 2) High levels of salt in most cheeses mean that there are lots of sodium ions around to compete with the hydrogen ions in glutamic acid, resulting in more MSG.
Autolysed yeast extract is also likely to have some MSG, since "lysed" means "broken" or digested; i.e. broken down, and yeast does contain sodium. Basically, MSG is a natural component of some foods, higher in concentration in some, lower in others.

Autolyzed yeast extract and MSG are not the same at all. MSG is mono-sodium glutamate, a natural chemical substance and nutrient that happens to enhance flavor and if consumed in excess, give headaches to sensitive people. AYE is made from yeast cells and adds flavor and nutrition. Same idea, different substances

Autolyzed yeast extract is another name for MSG. Really disappointed that it is in this. Why? Research MSG and you will know the dangers there.

This tastes fantastic and really gives the dough that yummy smell, think Pizza Hut. But, it's expensive and has a long list of foreign ingredients...counterproductive to my intensions for making homemade pizza. But for special occasions and guests I will definately be using it!

This is only ok. I didn't think it made much difference, and it isn't natural. For me, home baking is partly about the all-natural, I-know-where-it-all-came-from piece of things, and this flies in the face of that tradition.

I honestly didn't notice a big difference in taste when we used this. All the other reviews are 5 stars, but I have to say no one in my family noticed a taste difference, so it's not worth the cost.
