The ingredients are listed on the other SAF yeast. Do you have the ingredient list for this yeast?

Question: would this also be the right yeast for breads that use a sponge, such as your French-style Country Bread recipe? It's not quite as high-acid as a true sourdough (is it?).
This could be used in recipes with sponges, bigas, etc, but the SAF Red will also work on those breads. SAF Gold is formulated to tolerate the stresses of sourdough and sweet doughs better, so if you bake mostly sourdough or sweet dough, this is a good investment.

I live at 5000ft elevation, and my bread is best when I slow down the rise time. I see this yeast is for breads with slow rise times. Will it help produce even slower rise & better flavor?
The Gold is used in recipes where the ingredients dictate a slow rise (high sugar or sourdough). At elevation, in a standard recipe, you will have better results controlling rise with: yeast amount, dough consistency and dough temperature. Frank @ KAF.

Is this yeast recommended for all types of bread ? I make bread occasionally (savory and sweet) but I don't use up yeast quick enough to have more than one bag at a time. I'm out right now and would like to give this a try - but would feel better knowing it worked for all bread types. thanks!
This gold yeast is best for doughs high in sugar (sweet breads) or acids (sourdoughs). It gives a long, stong, steady rise. For more general baking needs, we like the SAF Red Instant Yeast. Mix it right in with the dry ingredients, it doesn't need to be proofed! Irene at KAF

Ordering from King Arthur and not using SAF yeast is like buying a silver coffee service and using it for instant. SAF gold is especially helpful for sourdough recipes. I use it for bread machine baking and the results are always perfect. My wife flipped when she saw that I ordered the yeast cannister, but after seeing (and tasting) the results, her complaints have become noticeably silent :)

I make cinnamon rolls quite a bit, this yeast in incredible! Cuts the rising times in 1/2 and the end results are amazing!

Three to four times a year, I make cinnamon rolls that require three risings and take *hours*. This yeast reduced the rising time by at least 30% and produced the best batch I've ever made.
