These are more like a dense cake, a cross between cake and bisquit. Not very good at that! Put them in my compost. The Apricot Sour Cream scones are made with butter that is cut into the scone mix. The size of the butter will determine if your scones are flaky (larger pieces like flat dime size) or cake like (cut into fine crumbly pieces). The Cream Tea scones are made with heavy cream and will give a more cake like texture. We have a biscuit recipe that uses heavy cream instead of shortening to add the fat and produces a tasty - yet not as flaky as traditional - biscuit.
