This upside-down apple tart, a specialty of the famous Paris restaurant, Maxim’s, requires a special tarte tatin pan. Ours is top of the line.

This is a great set; the plate that comes with it solves the "finding just the right sized pan to pan" dilemma many of us have when we cook a tatin. I've also used this for a torilla de patatas (tortilla espanol). Fabulous. Don't put cold water on it when it's hot. It's sturdy, but with enough abuse any ceramic will crack. If it was 13" or larger I'd give it 5 stars, but nobody else make one of these - so it's the only game in town.

This makes a wonderful tarte tatin. The recipe in the box works perfectly; you have to be patient when melting the caster sugar (and watch out: it's HOT), but the results are delicious. I made a pate brise for the top (chilled it a couple of hours before rolling out), and the dessert was delicious. All Emile Henry Flame pans cook beautifully either on the stove or in the oven, and all are very easy to clean. Plus they come in gorgeous colors and look great on the table.

I followed the recipe to the letter and it was a fiasco.There was way to much liquid after baking the apples and when I turned the apples in the serving tray provided with the set , guess where all the juice went.... I used 8 Granny Smith apples ( cut in 8) and before baking added 2 tablespoons of thawed apple juice concentrated. What a mess to clean up. It should have baked longer than 35 minutes , the top apples were still crunchy. I certainly was NOT impressed with this expensive "Tarte tatin" set. At least if the bottom tray had a higher rim it would have contained the liquid.

Wonderful Pan! It is EXACTLY the size they say it is...the SERVING platter is the one that is 13", just as specified. You can plainly see in the picture that the serving dish is bigger than the baker. The pan itself is plenty big for most families for a dessert! Even the brunch recipe they give serves 12!!! I do not understand the other reviewer's negative comments, if their family is so big that a dish serving 12 does not feed them, then I cant imagine any single pan would do the trick! That is not the pans' fault, nor KAF's! KAF is wonderful and all their products are always represented fairly. This pan is made extremely well and is well worth the cost for such craftsmanship. I have spent time in France and I can vouch for the authenticity of this wonderful pan!
